Gumbo, my new comfort food

One of the greatest recipes I have ever made (or modified) is definitely Spicy Chicken Gumbo. Recipe is below, follow the link on the right. Let me post my latest modifications here:

From More-With-Less Cookbook by Doris Janzen Longacre

Plan 1 hour for cooking, maybe more for prep

Saute' in large, heavy kettle:
2 T. oil
1/2 onion, diced
2 cloves garlic, minced
1 green pepper, diced
Blend in: 2 T. flour
Cook and stir over low heat until vegetables are tender.

Add:
1 can diced tomatoes in juice
1 can tomato sauce
1 small can tomato paste
3 c. broth or stock
1 1/2 T. salt
1/4 t. pepper
1 1/2 T. Worcestershire sauce
1/8 t. ground cloves
1/2 t. chili powder
pinch dried basil
1 whole bay leaf
2 T. dried parsley
Simmer 1 hour. Start cooking rice.

Add to gumbo:

To serve, dish up rice and pour gumbo on top. To store, add rice to gumbo and then put in containers.
