Cottage Cheese Casserole

I never tried this one but always wanted to.

Serves 8
350*
40 min.

Saute' in a large skillet:
2 T. margarine
1/2 c. chopped mushrooms
1/2 c. chopped onion
1/2 c. chopped celery
1 clove garlic, minced

Stir in:
1/4 t. marjoram, crushed
4 1/2 c. water
3/4 c. tomato paste
4 c. elbow macaroni
2 t. salt
1 t. sugar

Simmer until macaroni is tender, about 25 minutes.
Have ready:
1/4 c. parsley, chopped
2 c. cottage cheese
1/3 c. grated Parmesan cheese

Put half of the macaroni mixture in a greased 2 qt. casserole dish. Top with 1 c. cottage cheese & 1/2 of Parmesan cheese & parsley. Repeat layers. Bake at 350* for 40 min.

Colorado Pie

from "More-With-Less Cookbook" by Doris Janzen Longacre

Serves 4-6

Prepare pastry for 2 crust pie, using 1 t. onion salt in pastry if desired. Line 9" pie pan with half the pastry. Roll out top crust.

Brown in skillet:
1 lb. ground beef
1/2 c. chopped onion

Stir in:
1 T. sugar (not kidding)
1/4 t. pepper
2 c. cooked green beans, drained (or canned will do)
1/2 t. salt
1/8 t. oregano
1 can (10 oz) tomato soup or equivalent sauce

Pour into pastry-lined pan, add top crust and cut slits in it.
Bake at 400* for 25 minutes.

Tora Pascualina

(aka Argentine Spinach Pie)

Serves 4

30-40 minutes

Have ready: 1 pie shell & crust for top, unbaked

Cook, drain and chop finely:
1 1/2 c. frozen or 2 qt. fresh spinach

Saute' until tender:
2 T. oil
1 onion, chopped (1/2 is okay)

Combine:
spinach
sauteed onion
1/4 t. nutmeg
1 t. oregano
1/2 t. salt
2 beaten eggs
1 c. grated Swiss Cheese

Pour into pie shell. Arrange top crust and seal. Bake at 350* for 30-40 minutes. Serve hot in wedges.

Creamy Egg & Noodle Bake

Serves 6
350*
25 min.

3 c. noodles
Cook & drain according to package directions.
Saute' until tender:
2 T. Margarine
1/2 c. finely chopped onion

Combine:
Sauteed onion
drained noodles
8 hard-cooked eggs, chopped

Combine separately:
2 c. small curd cottage cheese
1 c. plain yogurt
1/3 c. Parmesan cheese
2 t. poppy seed
1 t. Worcestershire sauce
1/2 t. salt
dash pepper

Fold into noodle mixture. Pour into greased casserole.

Combine & sprinkle over top:
3/4 soft bread crumbs
1 T. melted margarine

Bake uncovered at 350* for 25 minutes
